In the production of fermented bread crumbs, the core of controlling dough fermentation uniformity lies in the precise synchronization of temperature and humidity field distribution, the consistency of dough core temperature, and the stability of yeast activity, so as to ensure that the gas production rate and gluten development rhythm of the same batch of dough are highly consistent.

Key Control Elements

  1. ‌Temperature and Humidity Homogenization of the Environment‌: The fermentation chamber/cabinet shall maintain a temperature of 26-30℃ (for bulk fermentation) or 36-38℃ (for final proofing), and a relative humidity of 75%-85%. A forced air circulation system is required to eliminate temperature differences (within ±1℃) and humidity gradients between layers and in corners, so as to prevent local crusting or over-fermentation.

  2. Consistency of Initial Dough State‌: Strictly control the temperature of the dough discharged from the mixer (26±1℃), which is achieved by adjusting water temperature, raw material temperature and stirring friction heat. Ensure uniform yeast dispersion (standardized pre-dissolution or dry powder mixing process) to avoid fermentation rate differences caused by excessive local concentration.

  3. ‌Air Circulation and Wind Speed Management‌: Adopt a "soft and stable" wind field design to avoid surface water loss caused by direct blowing. Regularly calibrate the speed regulation accuracy of the fan to prevent temperature and humidity stratification between upper and lower layers caused by insufficient wind pressure at low speed.

  4. Standardization of Process Parameters‌: Fix the yeast addition amount (dry yeast is usually 1%-2% of the flour weight), the salt-sugar ratio (salt ≤ 2% to inhibit over-fermentation, sugar within 5% to promote fermentation), and combine with the dough turning/de-aeration operation to balance the internal gas distribution and temperature uniformity.

  5. Process Monitoring and Feedback‌: Implement real-time multi-point temperature and humidity monitoring, supplemented by pressing test (the dough recovers slowly under finger pressure without collapse) and volume observation (expands to 1.5-2 times the original size), so as to dynamically adjust the fermentation duration instead of only relying on a fixed time.
